Agree that snowy weekends are perfect for cooking! I spent Saturday making a big pot of minestrone soup and a pan of enchiladas, and then on Sunday made the lemon meringue pie from Sally's Baking Addiction. Looking forward to trying the white bean chicken chili from your blog while it's still soup season, as well as the black bean soup.
Per your criteria, two days ago I made a batch of homemade almond roca, so that is ready. I just put a pound of red beans (Domingo Rojo/Rancho Gordo) in a pot to soak overnight. Tomorrow I will make a pot of red bean/smoked sausage soup with onion, celery, carrot, and savoy cabbage. Sunday when the storm hits I have beef cheeks for a cottage pie. When I get up tomorrow morning I will make some bacon cheddar biscuits. This will be a lovely hunkered down weekend, and yes I will be out there shoveling and taking care of horses but I will love every minute of it. Everyone be safe and warm and cook well.

NF, those short ribs are great. And, yeah, there's something about stirring that's therapeutic. Especially when I'm pissed off. I go through a lot of risotto.....
